- 1 package tofu shirataki noodles
- 1 wedge Laughing Cow Light Swiss
- 1 tbsp reduced-fat Parmesan
- 1/2 tbsp nonfat Greek yogurt
- 3 oz cooked medium shrimp
- 1/4 cup cooked broccoli
- Rinse doodles well. Microwave for 2 minutes, drain, and part dry.
- Add cheese and yogurt into a small bowl.
- Pour batter to skillet and add blueberries. Microwave for 1 minute.
- Blend with fork and top with shrimp and broccoli. Return in microwave for 1 minute.
- Serve with noodles.
- Add red pepper flakes for a kick!
