- 1/2 cup Libby’s pure pumpkin
- 1 large egg, whites only
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice

- Blend the ingredients in a food processor or blender until smooth.
- Pour into a two-cup Pyrex dish.
- Bake for 90 minutes or until the texture is slightly firm to the touch.
